How to Make Vegetable Samosa

Vegetable samosa is a popular Indian snack or street food that’s made with a flaky, fried pastry and filled with potatoes, peas, and a variety of aromatic spices and flavours. It is also vegan, gluten-free, and dairy-free. Homemade samosas are a world away from the cardboard triangles you’ll find in supermarkets, and they’re easy to tweak to suit your tastes.

The dough for samosa is very simple to make, but it does require resting and kneading. This is because the gluten in wheat flour can be very tense, and this will help the dough relax.

To make the dough, add the flour, salt, and carom seeds to a large bowl. Then, rub in the ghee or oil. Ghee is traditional Indian cooking fat, and it has a richer, more intense butter flavour than ordinary butter. It is a healthy choice, too, as it has had the milk solids removed, leaving only pure butter fat.

Once the dough is mixed, cover it and let it rest for 30 minutes. During this time, prepare the potato filling.

Fry the onions and ginger garlic paste in a little oil. Add in the spice powders, and mix well. Then add in the grated carrots and cook until slightly golden. Finally, add in the peas and mashed potatoes and mix well. Remove from the heat. For the dipping sauce, combine the yogurt, mint, cilantro, green onion and lemon juice.
